Plasma phospholipids. Plasma PL composed of a glycerol molecule having two fatty acids at positions sn-1, which is predominated by SFA or MUFA, and sn-2, which is predominated by MUFA or PUFA, and a phosphoric acid residue at the third position. The PL species include sphingomyelin (SPH), lecithin/phosphatidylcholine (PC), phosphatidylserine (PS), phosphatidylinositol (PI) and phosphatidylethanolamine (PE). Lecithin and SPH are the main fractions in plasma. SPH is not sensitive to changes in dietary fat but PC is very sensitive to the level and type of PUFA. The major fatty acids of plasma total PC are in the order of 16:0, 18:2n-6, 18:0, 18:1n-9, 20:4n-6 and 22:6n-3 (▇▇▇▇▇▇▇ et al. 1978; ▇▇▇▇▇▇ et al. 2008).
