Delifres. Ltd. will cut the carp and prepare it for processing. Free Fisheries Ltd. will brine and process the carp resulting in the following finished products: hot-smoked, in sauce and semi-canned in sauce. The entire process will be performed under a strict observance of veterinary, sanitary and epidemiological requirements, as well as preparation of required records. If successful, this use of cheaper, locally produced fresh-water fish could lead to lower price and higher availability to consumers, as well as greater profits to producers and processors.
