COUNTERS/SHELVES a. All food-contact surfaces shall be safe, corrosion resistant, nonabsorbent, smooth, easily cleanable, durable, and free of seams and difficult to clean areas. b. All other surfaces shall be finished so that they are smooth, nonabsorbent, corrosion resistant, and easily cleanable. c. Surfaces shall be constructed in compliance with Parts 4-1 and 4-2 of the Food Code.
