Food Service Requirements. Subrecipient shall adhere, but not be limited to, the following food service requirements: 1. Ensure that the following forms are available, completed daily, and maintained at each nutrition site for a minimum of twelve (12) months: a) Food Temperature Log – one should be available for congregate and home delivered nutrition services if hot or cold foods are provided to the client. b) Cleaning Schedule. c) Equipment Temperature Log – for all dish machines, refrigerators, and freezers. d) Production Schedule – applicable only if food is cooked at the site. e) The current Environmental Health Inspection Report shall be available at the site for review.
