Small winery means an establishment used for the commercial purpose of processing grapes or other fruit products to produce wine or similar spirits not to exceed 100,000 gallons per year. A minimum of twenty-five percent (25%) of the grapes or other fruit products fermented shall derive from the parcel or parcels of land farmed and owned or leased by the winery operator. Compliance with this standard shall be based on a production factor of 750 gallons per acre.
