Gravity Grease Interceptor definition

Gravity Grease Interceptor means a device that is constructed to intercept oily and greasy wastes from a food service establishment kitchen and food preparation area. Typical installation is located outside and in-ground as close to the kitchen fixtures as possible while allowing for accessibility for inspections and maintenance.
