In detail, the activity will include: isolation, biotyping and selection of suitable starters for the fermentation of these fruits; evaluation of how different preparation states influence the evolution of bioactive compounds, digestibility, and sensory attributes; study of the effect of these novel fermented snacks on the structure of the human gastrointestinal microbiome using the in vitro gastrointestinal tract simulator SHIME. The candidate will also be responsible for nucleic acid extraction from faecal samples, sequencing with the Illumina platform and bioinformatic analysis and correlation of omics data. Finally, he/she will contribute to the writing of reports and articles.
