At predetermined intervals, observe personnel for evidence of illness or behaviour that may indicate sickness (e.g. frequent trips to washroom, vomiting). Ensure that personnel suffering from or known to be carriers of a disease transmissible through food do not handle exposed food, ingredients, packaging materials or food contact surfaces. Record your observations to prove that the monitoring tasks were completed. Initial and date the record. What is the standard? Personnel known or suspected to be suffering from or to be carriers of a disease transmissible through food do not enter any food processing or handling areas, or handle food, ingredients, packaging materials or food contact surfaces without taking measures to prevent contamination. What are the risks? Personnel suffering from diseases transmissible through food (e.g. Salmonella, Hepatitis A) can transmit these diseases to food products and ultimately infect the consumer. How can you meet the standard? • Ensure personnel with diseases transmissible through food do not handle or work around exposed food, ingredients, packaging materials or food contact surfaces. • Ensure personnel immediately report to management when they are suffering from, show symptoms of, or are known to be carriers of a disease transmissible through food. • Ensure medical examination of a food handler is carried out if clinically or epidemiologically indicated. • Ensure that the following symptoms are reported to management so that any need for medical examination or possible exclusion from food handling can be considered: - jaundice; - diarrhea; - vomiting; - fever; - sore throat with fever; - visibly infected skin lesions (e.g. boils, cuts); or - discharges from the ear, eye or nose.
